Almonds and Sea-Salted Caramel

Ingredients
  • 120g whole natural almonds
  • 15g butter
  • 2 tbsp caster sugar
  • 1 tsp sea salt
Preparation
  1. Heat the almonds in a dry frying pan for about 1-2 minutes, stirring, then add the butter and let it melt, stirring it into the nuts.
  2. Sprinkle in the sugar and cook for 1-2 more minutes, until the sugar caramelizes and just begins to smoke a little
  3. Remove from the heat immediately and cool.
  4. Sprinkle in the sea salt, then serve.
  5. TIP: For extra caramel, first grease a metal baking sheet with a drop or two of vegetable oil. Heat 50g caster sugar in a heavy-based saucepan (don’t add water). Taking great care, cook over a high heat until the sugar melts and caramelizes, turning a rich, golden brown. Pour onto the prepared sheet and leave until cold, then break up with a knife or toffee hammer into tiny pieces. Stir these through the almonds.
